Paul Cadman
Chief Executive

Chartered FCIPD

Paul is a Member of the Board for the Institute for Apprenticeships. Paul was appointed to this post in January 2017.

Paul is also HR Director of Walter Smith Fine Foods, an expanding nationwide group of high quality award-winning farm shops.

Paul is chair of the Butchery Trailblazer Employer Group for England, a member of the Food Engineering Higher Apprenticeship Group and interim chair of the Learning & Development suite of Trailblazer apprenticeships.

A former International Athlete, Paul still holds the UK all time fastest 10 mile record for under 23's of 47 mins 50 secs.

Paul still enjoys his running, training virtually everyday and competing regularly.

Paul is also a NAS Apprentice Ambassador.


Mike Whittemore
Business Development - Project Lead, Butchery & Food

40 plus years experience in the meat trade, following my Grandfather and Father into the industry. Started out in retail butcher shops working as my family had done for Baxters (butchers) ltd, who had 440 branches. I was their youngest branch manager (20 years old). Fom there I went to work for Sainsbury’s and Asda as a department manager in various stores around London. From there I spent 14 years at the Meat & Livestock Commission in various training and account management roles. I then moved on to work for Somerfield/Kwik Save as their senior red meat buying manager. I then went to work for EBLEX/AHDB where I headed up the trade and product development department a role I thoroughly enjoyed. I am now working for CMT as an associate after taking early retirement from AHDB.

Married with one son who is a professional golfer. Hobbies are football (previous chairman of a semi professional football club), golf, travel and lifelong supporter of Chelsea FC.

Chris Riley
Butchery Development, Trainer & Assessor

I have been in the business since I was 14 when I started part time with Walter Smith. I started an apprenticeship in 2010 with Walter Smith Fine Foods and since then I have not looked back. Alongside my apprenticeship, I have competed in various events and have become quite successful.

One of my most prestigious accolades to date was becoming Britain’s Premier Young Butcher in 2014, this played a substantial role in me being selected to represent the UK for the world internationals which was an honour to be part of.Alongside these competitions, I’ve won several other awards including ‘apprentice with most management promise’ ‘champions of champions’ and many more.

In my next stage of my career I want to be a fully qualified master butcher and study my level 4 food safety.

In my spare time, I like to spend time with my family & friends, my hobbies are snooker, tennis, golf, football and swimming.

Kevin Langtree
Trainer & Assessor

I have worked in the meat industry for over 40 years. Combining 37 years experience in the retail sector as a Butcher and Store Manager for a large Midlands based company where I gained a wealth of experience and knowledge of the meat industry.

In that time I won numerous prestigious awards for different products. I have also worked in the food manufacturing sector for a short period.

I have a great love for the outdoors and that led me to get involved in the Scout Movement for over 15 years. In my spare time I enjoy keeping fit by taking part in Cycling and Running events around the country.

Denise Engley
Food assessor and verifier

Denise is a qualified Assessor and Internal Verifier for Crosby Management Training.

Denise has 30 years’ experience in the butchers trade where she started as shop assistant and worked up to product hand, producing cooked goods, assistant manager and manager for a leading butchery company.

Denise has been an assessor since 2011 and is qualified to level 4 food safety.

Outside of work Denise likes photography, is a keen gardener and taking her dogs around England and Wales as often as possible.

Craig McNaughton
Functional Skills Trainer

Craig is a qualified Functional Skills Trainer with five years’ experience of training and supporting people in employment across both the public and private sector, working for Shropshire Council as well as private training providers. Craig has also operated as a Designated Safeguarding Lead and has a strong interest in Special Education Needs, finding strategies and solutions to help make education accessible to all.

Away from work Craig has two young sons and enjoys doing various activities with them. He also has a passion for sport, good food and, as a Film and Television graduate, the cinema.

Joanne Cadman
Centre manager & assessor

Joanne is the Centre Manager for Crosby Management Training and she is also a qualified Assessor.

Joanne is qualified to Assess Business Administration where she has over 30yrs experience in Sales, Customer Service and Business Administration.

Joanne has spent most of her working life in the Private sector working for a large organisation where she gained many of her working skills.

Outside of work Joanne likes to keep fit and active and enjoys all outdoor activities including, hill walking, cycling and jogging. She is also a keen gardener and has a love for nature.
